How to brew them

The numbers I use.

Weigh everything. Guessing is how you end up disappointed in a perfectly good coffee.

Espresso Rosso as espresso

18 g in, 38 g out, 28 seconds. Medium roast, so it holds up in milk without turning bitter.

Espresso Rosso as a pour over

22 g of coffee to 360 g of water at 96 C, medium grind, about three minutes.

Filtro Bella Vita as a pour over

22 g of coffee to 360 g of water at 95 C, medium grind, three minutes. Red apple and panela sugar, clean all the way through.

Filtro Bella Vita in a French press

30 g of coffee to 500 g of water, coarse grind, four minutes, then press slowly.

Roast dates

Four weeks from the date on the bag.

Keep it sealed, at room temperature, out of the light. Whole bean holds its sweetness about four weeks from the roast date; ground is best inside a week. Do not refrigerate it. People do, and then they write to me about it.
