Tasting notes
- Red apple and panela sugar
- Orange acidity, bright but never sharp
- Medium body, clean and juicy through the finish
Origin
Huila department, southern Colombia. Caturra and castillo grown between 1,600 and 1,850 meters, fully washed, fermented twenty-four hours, then dried on covered patios.
Roasted medium. Forgiving enough for a French press, precise enough for a pour over, sweet enough to pull as a single origin shot.
Roasted for us by a local Charleston roaster, in small batches, with the roast date printed on the bag.
Bea
Pour over: 22 g coffee to 360 g water at 95 C, medium grind, three minutes.
Espresso: 18 g in, 40 g out, 28 seconds.
French press: 30 g coffee to 500 g water, coarse grind, four minutes.
Weigh it. Guessing is how you end up disappointed in a perfectly good coffee.
Sealed, at room temperature, away from light and heat. Whole bean holds its sweetness about four weeks from the roast date; ground is best inside a week. Do not refrigerate.
Pour-over at a 1:16 ratio gives me red apple and a brown sugar finish. Exactly what the bag says, which is rare.
